Cheeseeeeeyy penne balls from leftover pasta. Waste not want not and all that.

And the leftovers train keeps choo choo-ing along. This time it’s the turn of penne! There was a bowl of penne pasta with a spicy tomato sauce sitting happily in the fridge so rather than reheat it for a repeat meal I decided to turn it into some cheesy penne balls. This is simply delicious and a great way to shake up your pasta leftovers. Everytime I try this it tastes a little different but always scrumptious.

Into a food processor blitz your bowl of leftover pasta and sauce, violifes creamy herb cheese and mozzarella from Art of Zen Foods (flavour to your cheesy liking)
Salt, pep and voila.

Use an ice cream scoop to portion out into little balls and then roll in the yummy crumbs.

For the crumb mix:
Blitz the following:
White bread
Mixed nuts
Mint leaves
Salt
Pepper

Into the oven at 190 for 20 min until gooey in the middle and crisp on the outside.

I served it up with basil leaves and tomatoes.

Sriracha or pesto are always a great addition here too but the melted cheese is perfect as is.
