Sometimes the classics are the best. Who doesn’t love a chocolate chip cookie? especially when they have a little vegan makeover.
Quick and simple and feel free to play around with the ingredients if you don’t have certain flours or spices. I use these measurements but alter it every time depending on whats in the press.
3/4 cup coconut flour
1/2 cup plain flour
1 cup coconut sugar
3/4 vegetable oil
3 tbls black strap molasses
Generous pinch of:
Ginger powder
Cinnamon
Salt
Baking powder
Splash of vanilla essence
Scoop of raw cacao and maca.
Large handful of sunflower seeds and larger handful chocolate chips (I just broke up some dairy free choc that I had) mmm….
Cream the sugar, molasses, oil and vanilla essence
Add dry ingredients and mix until it becomes a solid shiny dough.
Make 12 rounds balls from the mix
Onto a baking tray at 180 for about 10 min.
Less if you fancy eating them hot and gooey but I favour them a cooled and chewier with a cuppa.
Sweet v’s savoury I will always go for the latter but these are so good I may have been converted! Give them a try and let me know what you think.
