Quick sunny salad to salute the lovely weather today. A trio of little toms, cannellini and green beans, toasted macadamia and sautéed shallots. Mmm…
Chop and pop the tomatoes in the oven at 180 for 30 min.
Drizzle with a little olive oil and sprinkle of salt.
After 20 min add the macadamia nuts to the tray and let them brown for 10 min.
Sautée the shallots, heat the cannellini beans and boil the green beans.
Combine all ingredients in a bowl and serve up with dressing of choice
For the dressing I blitzed
Olive oil: balsamic vinegar (3:1 ratio)
1 sautéed shallot
1 tsp of wholegrain mustard
Squeeze of lemon
