Sausage and bean casserole with a spicy kick

Hearty comfort food at its most delectable! Who doesn’t love simple, tasty recipes with just a handful of ingredients. I was too busy digging into this one pot wonder to take many pics but I see that as a positive sign!

Ingredients:

Moodley manors phenomenally yummy vegan sausages

1 tin of pinto beans

1 tin of chopped tomatoes

1 onion

2 potatoes

50g ish of chopped sundried tomatoes

Garlic powder, sumac, smoked paprika, chilli flakes, coconut sugar, salt, pep

Voila!

How to:

Fry off sausages as per packet instructions along with 1 chopped onion

Peel, cube and boil potatoes. Drain and set aside once cooked

Chopped a large handful of sundried tomatoes and set aside

Pour tin of tomatoes and drained tin of pinto beans into a pot and add garlic powder, thyme, smoked paprika, sumac, chilli flakes, salt/pep and shake of coconut sugar. Seasoning to your liking!

Bring to boil reduce and pour into an oven proof dish

To the tom and bean mix add:

1/4 cup of veg stock

Cooked sausages, onion, potatoes, sundried tomatoes

Into the oven at 180c for approx 20 min

Remove and attempt to plate up! I bet you can’t…. You’ll want to stand over this and devour… ha ha..
