Apricot and fig mince pies with vegan coconut “Baileys”

It doesn’t get much more festive than mince pies and “Baileys”! Vegan style…

 

For the faux baileys!

I’ve read lots of varying recipes for this but here is my go to (so quick you’ll cry with happiness) recipe.
In a blender pop the following
2 cans of coconut milk
1 cup of whiskey
1 cup of coffee
A generous squeeze of agave
Blend for 10 seconds and voila.
Pour into bottle/container of choice and store in the fridge not before pouring yourself a generous tipple of course.
Mine looks ginormous but I promise it’s bulked up with lots of ice.

 

For the mince pies. These are my favourite! Scrumptious but definitely a departure from the traditional.
For the mince-
Blitz the following in a food processor:
Dried figs, cranberries and apricots along with mixed spice, pumpkin seeds and a generous pour of rum.
Mmm…

 

 

I cheated with the pastry and used jus’rol. Roll out and use a cookie cutter/ glass to cut out your bases. Place each round into your mould and top with mixture I finished mine off with mini hearts but obviously not essential.
Into the oven at 200c for 15 to 20 min.

I drizzled them with agave when they were still hot along with flaked almond and amazing boozy almond and coconut cream.

 

For the cream:
I scooped the thick cream from the top of a can of coconut cream and blended it with almond extract, agave and rum. Holy moly! Sublime

Now excuse me while I slathered my third pie in yummy creaminess.

  1. Hey! Love your approach to vegan life and the possibility of Xmas betterment. Wondering though, I. Your mince pie mix, the after photo has green seeds/nuts. Pistachio colour. These aren’t on the recipe? Just for show or a secret recipe you aren’t willing to give away?:)

    • Hi there, thanks for your very kind words! and for pointing out my missing ingredient. Look making and eating new recipes but useless and typing them out… Impatience is not a virtue ha ha. They were pumpkin seeds but any sort of seeds works really well here. xx
