Spaghetti in a wasabi, spinach pesto with romanesco broccoli and mixed nuts

A delicious and seriously more-ish 20 min lunch dish! This is another one with the Veganuary crew in mind. They are high kicking their way through the month and keeping each other motivated. Amazing stuff. Well done to you all.

Wasabi spinach pesto with romanesco broccoli, mixed nuts and gluten free spaghetti.

Snip off your little broccoli trees and into a pot of water. Bring to the boil and then simmer until tender and delicious. Drain and set aside.

I reused the veg water and just brought it back to the boil and added a pinch of salt and drizzle of oil. This spaghetti takes about 12 min. Slightly different consistency as it’s rice flour based but just as tasty.

 

 

For the pesto:
I love wasabi and love it even more in pesto… Mmm…
You can play around with this until you reach the kick you like!
Don’t be scared of the wasabi its actually quite subtle in the pesto but gives it a very distinctive flavour.
It wouldn’t be one I would be slathering over my bread but it’s amazing as a pasta sauce.

Blend:
Handful of spinach
Desired amount of wasabi
(Followed instructions is using powder form)
2 cloves of garlic
Olive oil
Salt
Pep
Voila!

Drain pasta add veg, nuts and pour over pesto. Season with a little more salt and pep if required. You will def go back for a second bowl so make enough.
