Vegan cheese and bacon tofu rolls. Drool… 

If you plan to recreate one dish from little vegan let it be this one. Scrumptious. 


What you’ll need:
Tofu 

Tomato ketchup

Mustard

Garlic powder 

Chilli sauce

Red pepper 

Vegan cheese 

Vegan bacon

Scallions

Spinach pesto

Peanuts 

Remove your tofu from its packaging and dice into chunky cubes. Then get slathering each of them in a combination of garlic powder, mustard, Real Good Tomato Ketchup and Rebel Chilli lemongrass and ginger sauce. You’ll find both in Dunnes stores and for those of you not from Ireland I’m sure you have your favourite local brands too.  

Leave for 1 to 2 hours. Longer if you can. Pop them into the oven at 200c for 20 min. Remove from the oven and wrap each piece of baked tofu in violife cheese, red pepper slices and moodley manor vegan bacon as shown in pics. Back and into the oven then at 180c for 20 min. . I finished these little nuggets of heaven with a spinach pesto, chopped scallion and peanut crumble. Ahhhh…so so good and always nice to be using and supporting some of my favourite vegan friendly brands.
