Cheese and tomato vegan pasta bake

Oh pasta bake! The last week has been super busy so it’s nice to be back in the kitchen and not grabbing a random take away today.


I made up a yummy tomato sauce with 2 tins of tomatoes, a generous pour of Rebel Chilli habanero chilli, salt, pep, 4 cloves of minced garlic, parsley, sprinkle of coconut sugar and splash of balsamic vinegar. Bring to the boil, reduce to a simmer and adjust seasoning to your liking.

In a pan I sautéed Moodley Manor chick Hun that I just chopped into bite size pieces along with a whole red onion roughly chopped. I added the tom sauce once it had cooked through and then spooned a layer into a baking dish.

I topped the mix with a layer of grated Art of Zen Foods violife smoked cheese, followed by a layer of cooked pasta and then repeat with tom mix and finished with the violife tzatzki creamy and into the oven at 180c for 20 min. So so sooo tasty.
