Choccy sweet potato, maple and oat loaf

The banana bread recipe was so well received that I said I’d introduce you to another weekend favourite that is virtually impossible to mess up. It’s much richer than the banana bread so feel free to add less choc chips if desired.

1 sweet potato, peeled and cubed

100g of dark choc chips

250g porridge oats

200ml tinned coconut milk

80ml maple syrup

Dash of vanilla essence

Handful of pecans

Pinch of salt

Boil the sweet potato. Drain and place into a food processor along with the coconut milk, oats, maple, salt and vanilla essence. Rather than take out the food processor I just grabbed the nutri bullet and blitzed the oats and then wet ingredients. Less washing 😉

Spoon into a mixing bowl and add the choc chips. I like to add them when the sweet potato is still warm so it melts and you get nice little swirls but you can choose to let it cool and then add them if you’d prefer.

I normally add a handful of pecans but forgot this morning

180c in a lined loaf tin for 40 min
