Quinoa and tofu crumble

When life gives you leftover quinoa.. make a super quick tofu and quinoa crumble. No plan with this I was just using up some leftovers.

I cubed a packet of tofu, sliced a large onion, minced three cloves of garlic and finely chopped a scotch bonnet pepper (omit this ingredient if you don’t do spice) and then sautéed them in a heated and oiled pan. I added 3/4 of a jar of Passata that was sitting in the fridge.

Season with oregano, basil and parsley, salt, pepper and a drizzle of maple syrup or coconut sugar. Bring to the boil and then reduce to simmer for 15 min or so.

Spoon it in an oven proof dish and top with the cooked quinoa. I added panko flakes, parsley and pine nuts to the mix for an extra bite.

Pop into the oven at 180c for 15 min or until golden brown.

Bliss! and so simple.
