Bagel alert! Who said salads are boring ?!

Toasted bagel topped with smashed chickpeas dressed in minced garlic, salt, pep and a drizzle of agave, carrot, red and white cabbage and scallions with a spoon of rebelchilli , cucumber rolls and finally finely chopped lettuce bathed in dudesfoodskerry fab vegan mayo from the cork vegfest with a little salt/pep, pomegranate seeds, dill and poppy seeds.

A joyously delicious mess of a sandwich to eat. Not a crumb left! (if I wanted this to be perfect I’d have added some salted peanuts but I’d eaten them all ha ha)
