Ah simple toasties. I toasted arbutus bread topped with melted vegan mozzarella from the lovely Bob of little green leaf, tofu stripes and chopped asparagus sautéed in a pan after being marinated in a teriyaki dressing
and finally my favourite mush mix … mushrooms finely chopped and sautéed in a pan with minced garlic, chives, shake of chilli flakes, crushed walnuts salt/Pep, a splash of coconut milk and the key ingredient a generous drizzle of the garden herbs and lemon oil from Newgrange gold. Its so aromatic and really lifts the flavours. 🙌😃 I left this mushroom mix chunky today but if you blend it to a smooth consistency you have yourself an amazing pâté and if left chunky it’s also great with spaghetti. Just so tasty.
