After spending a incredible 10 days in Brisbane with family and friends celebrating my little sisters wedding (I want to do it all again) we rented a car and took a spin down the coast as we were flying out of Sydney to Vietnam. We spent exactly 17 hours in Byron Bay. In that time we ate in three restaurants, imbibed a few cocktails, had a romantic sunset stroll, slept and I just about managed to stir early and run ( ok there was a bit of walking) up to the lighthouse for sunrise. Why are we always so much more productive as tourists when there is limited time. So one of the delicious places we ate in that night was Elixiba. Vegan, gluten free, super passionate about every morsel of food they cook and devout in their vegan ethos.
We had …. Tofu skewers with a tangy ginger peanut sauce
Hand cut spiced chips with elixibas spice mix and garlic aioli
Orange and sesame cauliflower bites
The burger to beat all burgers which contained a plant based Pattie, caramelised onion, BBQ jackfruit, vegan fetta, coco mari, hemp pattie, tomato, salad, garlic aioli and moreeee spiced chips.
I loved this spot and only regret that we arrived so late to eat and didn’t get to spend a few days grazing the entire menu. It’s evident that a lot of love went into it. When in Byron… Elixiba it!
