This is one of the easiest, freshest, most satisfying snacky sort of salads to whip up on a lovely day like today.
1 cucumber
2 scallions
Handful of nuts
Handful of basil leaves
Chilli flakes
Dressing:
Always an easy one to remember teaspoon wise. 3, 2, 1, 1/2
3 teaspoons of rice mirin
2 teaspoons of apple cider vinegar
1 teaspoon of agave
1/2 of sesame oil
Juice of one lime
Voila!
Peel and chop your cucumber
Finely chop the scallions
Pick your basil leaves
Combine all three with a sprinkle of peanuts and chilli flakes
Add the desired amount of dressing to you serving
