I love how salads are more about construction and flavour than adhering to a strict recipe. As you’ve probably guessed from my posts over the years measurements and precision are not my strong points. A splash and a dash I say. This salad was from during the summer when I was down by the beach in Rosslare on a particularly beautiful day.
As simple a salad as you can make.
Courgette ribbons, pomegranate seeds, cantaloupe, pine nuts, green onion, Art of Zen Foods violife Greek block crumbled and a chilli lime dressing. Sublime.
